To turn off the subscribe and/or unsubscribe notifications, go to the Lists tab > click on the settings link > click on List Name & Defaults > then remove the email address(es) listed under "want email notifications?". That will stop the subscribe and unsubscribe notification emails. You can also choose just to receive one or the other if you want to cut down on the volume of emails.
