When you create a list in MailChimp you can give your subscribers the option to select the format of the campaign they receive; Plain-Text or HTML.
Enable format option on the signup form
When you're customizing your signup forms, you can allow your subscribers to select their preferred format.
- Navigate to the Lists page.
- Click the Gear drop down and select Forms.
- Check the box next to the Forms & Response Emails toYes, Allow Users To Pick Which Email Format They Prefer (Plain-Text Or HTML).

Enable format option in the list settings
You can allow your subscribers to select their preferred format by setting this option when you create a new list or you can turn it on in the list settings.
- Navigate to the Lists page.
- Click the Gear drop down and select List Name and Defaults.
- Scroll down and check the box to Yes, Allow Users To Pick Which Email Format They Prefer (Plain-Text Or HTML).

Notes
